Lydia 's signature recipes recognize the Maine landscape with a nod to Yankee tradition and hearth cooking seen through the eyes of a true visionary. She dedicates sections of the menu to both sea and land. Thoughtful and artistic creations include her lamented Lobster Pizza from BIBA days. The Maine potato is transformed into many regional preparations including Maine Mashed and a unique Hot Raised Potato Doughnut with Lyle's Golden Syrup.
