JADOT POUILLY FUISSE (2004)
The average annual production of Pouilly-Fuisse is approximately 45,000 hectolitres, or about 500,000 cases, most of which is controlled by the appellation's cooperative at Chaintre; the smaller, independent growers typically produce wines of greater character and complexity, yet these are very rarely bottled by the grower himself. Maison Louis Jadot has long maintained agreements with several growers exclusively in the communes of Pouilly and Fuisse, and many years ago began delivering oak casks to these proprietors so that they could set off the fermentation of their musts in these casks. Blended with other wines fermented in inert materials, the oak-fermented wines create a Pouilly-Fuisse particularly complex in its flavor spectrum, with greater fullness and structure than is usually found in wines of this appellation.

CABERNET SAUVIGNON, HELLER ESTATE CACHAGUA (2002)
The 120 acres of vineyards are certified 100% organic. Neither herbicides nor pesticides are used in the production of the grapes. This certification was granted after three vintages of clean farming, although the vineyards have always employed organic methods throughout the years. The label, "Dances on Your Palate", has received acclaim throughout America and Europe. This label was inspired by the 15 foot high, bronze sculpture by Toby Heller, overlooking the vineyards. The label was designed by Toby Heller and Michael Bolton. This blend of 78% Cabernet & 22% Merlot has aromas of bright cherry, with hints of toasty oak and cocoa. Look for beautiful, round herbal notes as nose opens; beautiful Bordeaux blend that shows earth, cherry, blackberry, and herb flavors; good backbone of tannins and bright acidity carry through into a balanced, lengthy finish.
